Apex Cultures® Alpha-Amylase Enzyme is a high-performance, thermostable α-amylase designed to help brewers maximize brewhouse yield and unlock greater flexibility in recipe design. By efficiently converting starch into fermentable sugars during mashing, it supports higher extract recovery while enabling increased adjunct usage without sacrificing performance. The result is a more efficient, adaptable brewing process that helps brewers hit target gravities, improve consistency, and optimize raw material utilization across a wide range of beer styles.

Derived from enzymatic activities of Bacillus licheniformis, Apex Cultures® Alpha-Amylase Enzyme delivers reliable starch hydrolysis across a broad temperature range of 149-197°F (65-90°C) and a pH range of 5.4-6.5, with optimal activity around pH 6.0. Its predictable α-amylase activity (6000 TAU/g) enhances starch conversion, supports consistent fermentability, and contributes to dependable attenuation and wort quality. Supplied as a liquid enzyme for easy dosing during mashing, it provides brewers with a robust, process-stable solution for improving efficiency and maintaining consistent beer performance.

Usage

Dosage

Dose between 200-600 ml/ton of grist during mashing. NOTE: optimal dose rate will depend on grist composition and mash profile.

Storage
