Derived from enzymatic activities of Bacillus licheniformis, Apex Cultures® Alpha-Amylase Enzyme delivers reliable starch hydrolysis across a broad temperature range of 149-197°F (65-90°C) and a pH range of 5.4-6.5, with optimal activity around pH 6.0. Its predictable α-amylase activity (6000 TAU/g) enhances starch conversion, supports consistent fermentability, and contributes to dependable attenuation and wort quality. Supplied as a liquid enzyme for easy dosing during mashing, it provides brewers with a robust, process-stable solution for improving efficiency and maintaining consistent beer performance.
