Apex Cultures® Glucoamylase Enzyme is a powerful saccharification tool designed to help brewers push fermentability further and unlock cleaner, drier beer profiles. By efficiently converting starches and dextrins into fully fermentable glucose during mashing, this enzyme is ideal for producing light-bodied, highly attenuated, and low-calorie beers. Whether you're brewing crisp lagers, dry IPAs, or modern reduced-carb styles, Apex Cultures® Glucoamylase delivers consistent performance across a wide range of raw materials and adjuncts, helping maximize brewhouse efficiency while minimizing residual sugars.

Derived from the controlled fermentation of Aspergillus niger, Apex Cultures® Glucoamylase hydrolyzes both α-1,4 and α-1,6 glucosidic bonds in starch, releasing single glucose units for yeast fermentation. The liquid enzyme exhibits an activity of 375 U/g and performs across a temperature range of 122-167°F (50-75°C), with optimal activity at 149°F (65°C) and pH 4.0 (effective range 3.0-5.5). Recommended dosing is 50-100 ml per 100 kg of malt and adjuncts, added at mash-in to ensure thorough mixing. This targeted enzymatic action supports high attenuation, improved sugar conversion, and consistent fermentability in both traditional and adjunct-heavy brewing applications

Dosage

Dose between 200-600 ml/ton of grist during mashing. NOTE: optimal dose rate will depend on grist composition and mash profile.

Storage

Store in cool dry place away from heat. Do not freeze. Max storage is 18 months.
