Derived from the controlled fermentation of Aspergillus niger, Apex Cultures® Glucoamylase hydrolyzes both α-1,4 and α-1,6 glucosidic bonds in starch, releasing single glucose units for yeast fermentation. The liquid enzyme exhibits an activity of 375 U/g and performs across a temperature range of 122-167°F (50-75°C), with optimal activity at 149°F (65°C) and pH 4.0 (effective range 3.0-5.5). Recommended dosing is 50-100 ml per 100 kg of malt and adjuncts, added at mash-in to ensure thorough mixing.
