Apex Cultures® AntiOx PRO is a brewhouse antioxidant formulated for mash-stage application to reduce oxidation risk at its source. By targeting and inhibiting lipoxygenase (LOX) activity during mashing, AntiOx PRO helps limit aldehyde formation and other oxidative reactions that can negatively impact beer flavor stability. Its synergistic formulation of potassium metabisulfite (1 g/hL yields approximately 2.6 mg/L free SO₂), ascorbic acid, and gall tannin provides early-stage antioxidant protection when it matters most. Designed for instant solubility and direct mash addition at 5-10 g/hL (optimal temperature 100-107°F / 38-42°C), AntiOx PRO integrates seamlessly into standard brewhouse operations.

By reducing oxidation from mash to package, AntiOx PRO helps preserve freshness, maintain aromatic expression, and extend shelf life beyond what post-packaging antioxidants alone can achieve. Dosage

To effectively target potential oxidation add 5-10 g/hL during the mash after the grist and water have been fully mixed.
