Clarity Pro is a liquid enzyme blend containing a neutral protease and a proline-specific endopeptidase derived from selected strains of Bacillus subtilis and Aspergillus niger. Its targeted proteolytic activity degrades gluten and proteins responsible for chill haze, delivering reduced turbidity and improved protein stability as verified by EBC analytical methods. Optimized for standard beer formulations, Clarity Pro performs best in recipes containing up to 20% high-protein malts or adjuncts such as wheat or barley, and is effective across a temperature range of 50-77°F (10-25°C) and pH 4.5-7.0, with optimal activity at pH 5.0-5.5.

Usage

Dosage

Dose at 2-10 ml/hl of chilled wort once transferred to the fermenter for gluten-free production or in the bright tank for stability purpose.
